Carrot cake - recipe

  • 1.5 cups grated carrots
  • 1 sour apple Grated orange zest (from 1 orange)
  • 1 cup flour (e.g., cake flour)
  • 1 cup Xylitol
  • 1/2 cup odorless and flavorless coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon gingerbread spice
  • 1 teaspoon baking soda
  • 4 eggs
  • 1/2 teaspoon salt



  1. Sift flour into a large bowl, add baking powder, baking soda, salt, orange zest, cinnamon, and gingerbread spice. Mix all the ingredients thoroughly and add the oil.

  2. With a hand mixer, mix eggs with sugar and pour into the batter. Mix everything again.

  3. Finally, add the carrot puree and finely grated apple. Mix everything thoroughly once more.

  4. Preheat the oven to 180 degrees Celsius. Line a round cake pan with parchment paper, pour the batter into the pan, and place it in the preheated oven. Bake our cake at 180 degrees Celsius for about 50 minutes.
  1. After 50 minutes, check with a toothpick if the cake is done - if it's moist, leave the cake in the oven and check it every 5 minutes using the same method. You can also sprinkle the cake with powdered sugar if desired.
